Sales process can be edited in Settings > Sales & proposals > Sales statuses. You can set the order of statuses, add and remove statuses and edit the probabilities for each status.

When you need to change the status of a sales case, go to Sales overview kanban or Sales tab of a specific case. When closing a deal, Probability is automatically updated to 100% and current date becomes the Expected order date. These can also be adjusted manually if needed.
