Sales process can be edited in Settings > Sales & proposals > Sales statuses. You can add and remove statuses and edit the probabilities for each status. The order of the statuses is based on their probability %.

When you need to change the status of a sales case, go to Sales overview kanban or Sales tab of a specific case. When closing a deal, Probability is automatically updated to 100% and current date becomes the Expected order date. These can also be adjusted manually if needed.

When the case is closed and sales status set as won, the sales case becomes an open project. If the case is set as lost, sales case becomes a closed project.

To view Sales overview you need to have at least Project manager level access rights to projects.
